Ultrasonic Food Cutting Systems: Conveyor Inline & Rotary Table Models
Ultrasonic food cutting is an advanced portioning technology designed for soft, sticky, layered, frozen and multi-texture food products. Unlike conventional mechanical knives that squeeze, drag and tear food, the RPS‑SONIC ultrasonic cutting system drives a titanium blade with high-frequency vibration (20 kHz / 40 kHz). This vibration creates a near-frictionless cutting interface, slicing through products with minimal compression. It delivers clean, consistent portions without smearing filling, crushing delicate structures or generating excessive crumbs. Our two mainstream configurations — conveyor inline cutters and rotary table cutters — serve different production layouts, batch volumes and product shapes for bakeries, confectionery factories and prepared food manufacturers.
Main Application Range
Ultrasonic cutters excel where standard blades struggle most:
Bakery: mousse cakes, sponge sheet cakes, brownies, Swiss rolls, bread loaves, filled pastries
Confectionery: nougat, energy bars, fudge, chocolate composite bars, nut and fruit candy
Dairy: soft cheese, butter blocks, cream-based desserts
Ready-to-eat food: sandwiches, wraps, filled pizza bases, pre-portioned chilled meals
Frozen food: frozen desserts, frozen dough, frozen layered snacks
Core Functions & Operational Benefits
Clean, smear-free separation of multi-layer products Cream, jam, caramel and nut fillings stay in place instead of being dragged across cut surfaces. Layers remain clearly separated, which directly improves retail shelf appearance and reduces rejected packs.
Minimal sticking and self-cleaning blade effect High-speed vibration stops sticky ingredients from building up on the titanium blade. This drastically cuts frequent stops for blade wiping and cleaning, boosting overall line uptime.
High dimensional repeatability Servo-controlled cutting paths deliver consistent portion weight and size, reducing giveaway and scrap. Precision stays stable even with soft, deformable substrates.
Low compression cutting, no collapse Because the blade slices rather than pushes through the product, airy, porous and delicate textures keep their shape, avoiding shrinkage or edge collapse.
Less crumb generation and easier hygiene management Fewer loose crumbs simplify housekeeping, cross-contamination control and allergen changeovers. All food-contact parts are built with food-grade stainless steel and titanium for washdown environments.
Two Machine Configurations: Conveyor Inline vs Rotary Table
Conveyor Inline Ultrasonic Cutter
The conveyor inline model is built for continuous, high-volume production lines. Products travel on a food-grade belt beneath the ultrasonic cutting head while cutting happens on the move. Best fit for: rectangular sheet products, slab cakes, brownies, energy bar slabs and long continuous batches that feed into an existing production or packaging line. Strengths: high throughput, easy integration with upstream depositing, cooling tunnels and downstream packing equipment; recipe storage for fast size changeover; runs non-stop for mass production. Typical cuts: square and rectangular portions, longitudinal slicing, grid cutting of full sheets.
Rotary Table Ultrasonic Cutter
The rotary table version uses a rotating indexing plate to carry round or individually placed products under the fixed ultrasonic cutting station. Operators or automated loading place whole round cakes, cheesecakes or single large units onto stations, and the table indexes for precise angular cuts. Best fit for: round cakes, tarts, cheesecakes and circular products requiring triangular wedges. It is widely used for mid-volume bakery production and custom portioning jobs. Strengths: compact footprint, ideal for standalone use where inline conveyor integration is not feasible; flexible angle setting for 6-slice, 8-slice, 12-slice and custom wedge layouts; simple operation and low learning curve for bakery staff. Typical cuts: triangular slices, radial segmentation of round products.
Why Choose an Ultrasonic Blade Instead of a Standard Cutting Knife?
Traditional guillotine knives, wire cutters and rotary slicers rely on heavy downward pressure. When working with sticky or layered foods, they create three common pain points: smeared filling, deformed edges and frequent blade fouling that forces repeated cleaning stops. Ultrasonic vibration solves these root problems. The vibrating blade penetrates the product with almost no drag:
No smearing of cream, caramel or soft fillings between layers
No crushing of aerated mousse, sponge or delicate frozen structures
Far fewer cleaning cycles, which directly raises OEE and cuts labour cost
Uniform visual quality across every slice — critical for branded retail packaged food
Lower waste from misshapen, rejected portions
Better compliance with premium retail standards for dessert, confectionery and chilled ready meals
For food manufacturers competing on consistent presentation and stable yield, ultrasonic cutting is not just an upgrade — it is the proven solution for difficult-to-cut sticky, layered and frozen recipes.
RPS‑SONIC Ultrasonic Food Cutting Systems
Our ultrasonic generators feature automatic frequency tracking, adjustable amplitude and recipe memory. Titanium blades are custom-sized according to your product height and width. Both conveyor inline and rotary table models support full washdown, touchscreen HMI and easy connection with PLC and production data systems. We provide blade testing for your actual samples before final machine configuration.
